Also this year, the Italian pastry chefs will have the opportunity to put themselves to the test and participate to Panettone Awards, the third edition of Italy's best panettone contest, in collaboration with Aromacademy and Cesarin.
This will be your chance to see talented artisans in the creation of the best artisanal traditional and chocolate panettone.
Only 200 spots available. two selections judged by the watchful eye of an outstanding panel of judges and the title of best Italian Panettone.
The two challenges
For this first step, the Italian participants will have to make 3 traditional panettone without icing, low or high and weighing between 980 g and 1030 g, including the baking cup.
The 3 preparations will be sent to the Aromacademy headquarters and will be evaluated by a jury of Master Pastry Chefs according to the criteria of: aesthetic appearance, alveolation, distribution of the fruit and taste.
The 10 finalists thus identified by the jury will have access to the final selection which consists of two challenges:
