The contest for Italian panettone makers

Panettone Awards: the 3rd edition

Also this year, the Italian pastry chefs will have the opportunity to put themselves to the test and participate to Panettone Awards, the third edition of Italy's best panettone contest, in collaboration with Aromacademy and Cesarin.
This will be your chance to see talented artisans in the creation of the best artisanal traditional and chocolate panettone.

Only 200 spots available. two selections judged by the watchful eye of an outstanding panel of judges and the title of best Italian Panettone. 

The two challenges

The 1st challenge: the traditional panettone

For this first step, the Italian participants will have to make 3 traditional panettone without icing, low or high and weighing between 980 g and 1030 g, including the baking cup. 

The 3 preparations will be sent to the Aromacademy headquarters and will be evaluated by a jury of Master Pastry Chefs according to the criteria of: aesthetic appearance, alveolation, distribution of the fruit and taste.

The challenges of the final selection

The 10 finalists thus identified by the jury will have access to the final selection which consists of two challenges: 

  • THE TRADITIONAL PANETTONE CESARIN
    To make 3 traditional panettone without icing, using products of their choice from the Cesarin kit they will receive: candied orange from the Linea Academy, diced candied citrus from the Linea Selezione, and candied citrus pastes of your choice from orange, lemon and tangerine of Ciaculli.
  • IRCA CHOCOLATE PANETTONE 
    To create 3 dark dough chocolate panettone and chocolate glazed, using the products from the IRCA kit received between: Sinfonia Fondente 68% and Sinfonia Pistachio.

The judges of Panettone Awards

The Panettoni of the 10 finalists will be evaluated by an excellent technical jury  lead by the Italian Pastry Master Davide Malizia and composed by:

  • Alessandro Servida - Chef Pâtissier
